Homemade Almond Joy (Vegan)

This has been a crazy week. Monday we noticed our refrigerator/freezer was getting hot.  On Tuesday the repair guy said it was broken and would need a new something, the problem is he didn't have that something.  The management company told him we had a Viking fridge.  Fast forward to today, and we are still using mother nature and coolers as our refrigerator/freezer until tomorrow, when the repair guy comes back.  My recipe today had to be done creatively.  My daughter and I love Almond Joy candy bars.   A few weeks ago we tried to make our very own.  Yes they are so very yummy homemade, and the ingredient list is so small and with an ingredient list you can pronounce.

My mom's favorite candy bar is the Almond Joy.  I would agree, they are delicious.

 Ingredients for this recipe are: 1 cup sweetened or unsweetened coconut, 3 tablespoons
coconut oil, 18 raw almonds, pinch of salt, 4 ounces chocolate chips, 1 tablespoon honey
 if you are using unsweetened coconut.

Mix coconut with coconut oil and honey if you used unsweetened coconut in a small
bowl with a pinch of salt.  

 Spoon out a tablespoon at a time onto parchment paper lined plate.  Quickly shape into small
flat logs.  Push 2 raw almonds into coconut.  Freeze for 15 minutes, I ended up covering mine
 and putting them on my very cold snow covered balcony since I do not have a working freezer.

 Pour boiling hot water into a medium size saucepan or heat 1 inch of water in saucepan till boiling.  Place bowl over boiling water.  Pour chocolate chips into bowl.  

Reduce heat to medium-low and stir until melted, turn off heat.

 Place almond coconut bars into chocolate, quickly spoon chocolate onto bar and remove with
small fork.  Place back on parchment paper plate.

 Place Almond Joy bars in snow, or freezer if yours works, for 10 minutes.

So pretty, and great for that sweet tooth craving I just helped you have.
