Chicken Lettuce Wraps

Years ago my family and extended family got together at PF Changs to celebrate my brother Todd's thirtieth birthday.   It was my first experience having their food.   We had the chicken lettuce wraps and oh my goodness they were so delicious!   I've thought about those wraps and made them once or twice since then but this is my first time making them and sharing the recipe with all of you.   I've changed and streamlined the process a little.   I used whole chicken thighs, but you could substitute with preground chicken.   Instead of iceberg lettuce, I opted for the pliable butter lettuce but if you like the crunchy lettuce then use iceberg.   These were very delicious and a quick weeknight meal choice.

Chicken Lettuce Wraps

Ingredients:

6 Boneless Skinless Chicken Thighs (1 1/2 lbs ground chicken)
6 Cloves Peeled Garlic
1 Vidalia Onion
1 Orange Bell Pepper
2 Heads Butter Lettuce
1 Cup Hoisin Sauce
1 Tablespoon Sriracha Sauce
2 Tablespoons Soy Sauce
2 Tablespoons Rice Wine Vinegar
2 Teaspoons Cornstarch
2 Teaspoons Cold Water
Sesame Seeds

Process:

Cut the bell pepper into large chunks, peel and cut the onion into quarters.  Pulse the vegetables in a food processor into a rough dice.  Cut the chicken thighs into quarters, add to the food processor.  Process on high until chicken is ground and mixed with vegetables.

Blend hoisin sauce, sriracha sauce, soy sauce, and rice wine vinegar in a blender. Reserve 1/2 cup of sauce in a separate container.

Cook meat mixture over medium-high heat until meat is browned, add remaining sauce and reduce until thickened.  After it has reduced by half add a slurry of the cornstarch and water blended together. Remove from heat and serve spoonfuls in lettuce leaves with drizzled reserved sauce and sprinkled with sesame seeds.

Enjoy!

Tuna Noodle Casserole

If you happen to be like me and enjoyed tuna noodle casserole when you were younger, this recipe is for you.  My mom made tuna noodle casserole like every other woman out there in America, you know, with the cream of chicken or mushroom soup, thanks to a certain red labeled soup manufacturer.  When my husband and I were first married, I continued using the same cream soup and making food similar to what he and I had grown up eating.  It wasn't long before I decided to find my own cooking identity and make food in a different way.  Since I don't use canned soup and my children haven't grown up with me making casseroles, they don't like them very much.  My husband requested tuna noodle casserole, so I decided that our casserole ban would be lifted and we would enjoy a new take on a classic favorite from my husband's and my childhood.  This casserole continues to remind me of my childhood, and now that I came up with this recipe we can enjoy it in a whole new way, without sacrificing the comfort food part of this recipe.

Growing up we ate this more like a creamy noodle dish rather then a crumb topped baked casserole.  This is a combination.   My husband didn't want the overcooked noodles you get when it is baked
but still wanted the casserole with the crunchy topping.

Ingredients:

12 ounce bag of Wide Egg Noodles
2 Cans Albacore Tuna in Water
1 cup finely grated Grana Padano (Parmesan Cheese will also work) plus 2 tablespoons
3/4 package of Ritz Crackers
1 bunch Green Onions
3 large cloves Garlic
1 Yellow Onion
2 cups Heavy Whipping Cream
1 tablespoon Cornstarch
2 tablespoons Cold Water
Sea Salt
Fresh Cracked Black Pepper
2 teaspoons Fresh Thyme or 1 1/2 teaspoons Dried Thyme
2 tablespoons Olive Oil
1/4 cup softened Butter

Dice onion, cut green onion, and press garlic.

Saute onions in a deep saute pan with the olive oil over medium heat until tender, add garlic
and cook  until tender.

Add cream, salt and pepper to taste.

Add Grana Pardano, stir and cook over medium heat until cheese has melted.  Stir in drained tuna.

Cook noodles in large stock pot of water, al dente, to the tooth.  Cook for the shortest recommended time on the package, remove from pan and drain in colander.

Add cooked noodles to cream sauce, green onions, and thyme.
Crush the Ritz Crackers.

Pour tuna noodle mixture into a butter baking dish.

Cover noodles with crushed crackers, cheese, and dabs of butter.

Broil until crumbs brown, cheese melts and bubbles.

Doesn't that look like a plate of comfort food to make any one remember a happy childhood?

Enjoy!

Beef Stir Fry

My family went to Maryland to visit friends two and a half weeks ago and I completely left my laptop power supply and cord at our friends house.  It was torture.  I had to read and send emails on my phone and auto correct made it impossible to write intelligible emails.  When it comes to my recipes, I couldn't upload my photo's and edit them and post on my blog.  I am so sorry for not posting sooner. Thankfully, my friend brought me my cord and I can now leave my computer power rationing behind me and post all the recipes that I have ready to share.  Hopefully the recipes I have to share make up for my absence, be brutal, you can chastise me if these recipes don't hold up to what you expected from my absence.  Okay, now that I have explained and given my pathetic excuse for not blogging, here you go, the moment you have been waiting for.

This recipe came about after a night of wanting to make an easy dinner, and no I didn't photograph it. My husband took the leftovers to work and he and his co-worker shared them.  The co-worker being Fernando, you remember him right?  Anyway he said, this is very good stir fry.  She's gonna post this right?  To which I said, no I didn't photograph the process, and he said well then you have to make it again.  Finally, I made it again, and photographed my process.  This is a simple stir-fry, as in a few ingredients but with a lot of flavor and color.  I love stir-fry's because of the color and all the vegetables you can cook together.  Stir fry is like the Chinese equivalent of the American casserole but a lot faster and maybe even healthier?  Who knows, anyway recipe time.

I have an extreme need to create a rainbow when stir-frying, the taste and textures worked well.

Ingredients for this recipe are:

2 lbs. Stir fry Beef (Yes, that's right I let the butcher cut the beef, and it was at an Asian market, so I figured I was good to go.)
1 Yellow Crookneck Squash
1 Zucchini
1 Crown of Broccoli
2 Carrots
1 Yellow Bell Pepper (If you can get red, use red)
1 Package of Baby Bella Mushrooms
5 Green Onions
2 tablespoons Better than Boullian Beef Flavor
4 tablespoons Soy Sauce
4 tablespoons Toasted Sesame Seed Oil
4 tablespoons Chinese Spice Sauce
1 1/2 cups Water
Cornstarch
Vegetable Oil

Combine 2 tablespoons soy sauce, 2 tablespoons toasted sesame seed oil and 2 tablespoons spice
sauce in a small bowl and whisk together.  Place beef in a large bowl, pour sauce onto beef and stir.
Allow beef to marinate for 20 minutes on the counter.

Rinse all vegetables.  Cut squash and zucchini into half moon slices, 1/4 inch thick.  Cut carrots at a slight angle and into slices.  Cut bell peppers into 1/4 sticks.  Cut mushrooms into slices.  Cut green onion also at an angle and include white part.  Place harder vegetables, carrots, broccoli, and bell peppers together.  Place softer vegetables together, the squash, zucchini, mushrooms, and green
onions.  Organizing the vegetables will allow you to stir fry them more quickly and also reminds
you which vegetables will need to go in first since they take longer to stir fry.

A word of warning, stir frying is accomplished in a preheated wok at the highest temperature
your burner can provide.  Turn on exhaust fans and open windows, this will be a very smoking
 hot process.

Mix the rest of the soy sauce, toasted sesame seed oil, and spice sauce
Once you have everything you need next to your wok, you can start, I mean everything.  You need
all ingredients, the remaining sauces/oil mixed together and of course a wok spatula.  Preheat the
wok over high heat.  When you begin to see smoke add 1-2 tablespoons of vegetable oil and half
the beef. We don't want to crowd the beef, we want to sear it quickly.  Continually move the beef around the wok, one layer.  When you see an even seer all over the beef immediately remove the
beef to the bowl you had at the ready and repeat with the remaining beef.

That beef is done.  Yes, you will create a lot of smoke, hence the need for excellent ventilation.

Place the wok back on the high burner.  Add another 2 tablespoons oil and the hard vegetables:
broccoli, carrots, and bell peppers.  Stir and add 1/4 cup water, cover with lid and allow to steam just until the vegetables are bright and slightly cooked.  Stir fry vegetables are NOT MUSHY, really they aren't.  My husband dislikes mushy vegetables thankfully.  Remove lid and add mushrooms, zucchini, and squash, stir fry until softened.  Add the sauce and stir.

Bring back the beef, and add the water, stir until thoroughly combined.  Mix a cornstarch slurry with cornstarch and cold water, start with 1 tablespoon cornstarch and enough cold water to create
slurry.  Move the stir fry enough to create a small opening to see the sauce, when you see it is
bubbling, add the cornstarch and stir.  When the sauce is your desired thickness it is done.

Add the green onions and serve over steamed rice.

Enjoy!

Mini Beef & Potato Pasties

A few years ago, as my contribution to a church social I made beef pasties, and well I haven't made them since.  I tend to be a one hit wonder with certain recipes.  It is a fault I have.  Finally, after thinking about making pasties again, I finally did it.  Today was another bring dinner to a new mom day, just so happens it is the same mom I brought dinner to last Wednesday.  She said her husband doesn't like seafood, but she enjoyed the bouillabaisse and ratatouille without him.  Since seafood was a no go with the new dad, I tried to think like a man and realized meat and potatoes.  Pasties are an Irish meat pie, and are perfect for the meat lover in your life.

Meat and potatoes in a biscuit crust, what more  could a man want?  Mushroom gravy too.

Ingredients:

1 lb. Self-Rising Cake Flour
1 1/3 cup Buttermilk (1 tablespoon vinegar with milk added to 1 1/3)
4 ounces cold Butter
2 lbs. Eye Round Beef roast
1 Yellow Onion
4 Idaho Potatoes
2 pints Baby Bella Mushrooms
2 cups plus 1 tablespoon water
2 tablespoons Better Than Boullian Beef Flavor
3 tablespoons Olive Oil
1 Egg Yolk
Cornstarch
Sea Salt
Freshly Cracked Pepper
Garlic Powder

Make sure your butter is cold. Cut half the butter into pats and the other half into 1/2 inch cubes.
Using your fingers to mix butter and flour to create pea sized balls of butter and flour.

See my flour butter globules?  These are what make the wonderful flaky layers.  Add the buttermilk and knead until a ball is formed.  Add flour if the dough is too wet.

 Voila we have our crust.

Roll on a lightly flour board into a large 1/2 inch thick rectangle.  Fold into thirds, like a letter. Turn the dough 90 degrees and roll and repeat previous steps.  These steps are creating the flaky layers.

Place folded dough on a parchment lined sheet pan and refrigerate.

Butterfly beef roast.  Rub the beef roast with salt, pepper, and garlic powder.  Rotisserie for
30 minutes or roast in 350 Fahrenheit oven for 45 minutes or until the internal temperature
reaches 145 Fahrenheit.

Preheat oven to 350 Fahrenheit.

Rinse, peel, and grate the potatoes.

Place grated potatoes into a bowl of cold water and allow to soak for 5 minutes.

Rinse grated potatoes under colder water and place in a flour sack towel, squeeze out the liquid.

Peel and dice the onion finely.

Preheat large skillet over a medium flame.  Add 2 tablespoons olive oil, grated potato and onion.
Stir to coat.  Add salt, and pepper to taste.  Cover and allow to cook for 5 minutes, or until
grated potatoes are browned and soft.

 Dice beef into small cubes.

Add beef to potatoes and stir.

Roll dough into a large 1/4 inch thick rectangle.  Push a 3 inch round cookie cutter straight down into dough, this will ensure the layers are left intact and repeat till all the dough is cut.

Add 1 heaping tablespoon of beef potato mixture to the dough, fold in half and seal.

Place completed mini pasties on parchment paper lined cookie sheets.
Mix egg yolk and 1 tablespoon water.  Brush on the pasties and sprinkle pasties with salt.

Bake pasties for 15 minutes or until golden brown.

Rinse mushrooms and sit into slices.  Saute in large skillet over medium high heat with
1 tablespoon olive oil.  Sprinkle with salt, pepper, and garlic powder.  Add water and Better
than Boullian.  Bring to a boil.  Mix 1 tablespoon cornstarch and tablespoon water to begin with.
Add cornstarch slurry to mushrooms and water.  If the gravy is thick enough, it is done, if not,
make more corn starch slurry and add slowly until desired thickness is achieved.

Serve pasties with gravy to dip in.

Enjoy!

Marshmallows

Yes Virginia, you can make homemade marshmallows, but seriously it was funny how many of the Girl Scouts were completely surprised by the thought of making your own marshmallows.  One Girl Scout did say her mom had made them and said they were too hard to make.  I am not a good judge of how hard a recipe is, personally I think this is a very easy recipe. Yes, it does involve some time and certain tools but very doable.  These are very yummy with the graham crackers I showed you how to make here and with Hershey's Kisses, for our Teacher Appreciation Luncheon we made open face S'mores with one graham cracker, marshmallow, and a Hershey's Kiss and toasted them together under the oven broiler.  These crackers are very addictive, each time I reach for one I want another one as soon as I have finished one.  I highly recommend these, the coconut oil puts them over the top.

Mmmm, marshmallows.  Think of all the possibilities with these beautiful sugar clouds!

Ingredients for this Recipe Are:

1 cup Lite Corn Syrup
1 cup cold water
3 packets Unflavored Gelatin
1 1/2 cups Cane Sugar (white sugar also works)
1 teaspoon Vanilla Extract
1/4 teaspoon Salt
1/4 cup Cornstarch
1/4 cup Powdered Sugar

Pour 1/2 cup water and gelatin in mixing bowl with whisk attachment standing by.

Pour 1/2 cup water, corn syrup, cane sugar, and salt into medium sauce pan with lid over
medium/high flame for 3 minutes.

Remove lid from sauce pan, attach candy thermometer and continue cooking until temperature
reaches 240 Fahrenheit.

Turn off burner and begin slowly adding sugar mixture to gelatin, alternating between
adding syrup and mixing on high until syrup has all been added.

Continue mixing on high for 12 minutes, add vanilla extract right before the time is over.

Mix cornstarch and powdered sugar together.
Place a piece of parchment paper in a 9 x 13 pan.

Sprinkle 1/2 cornstarch/powdered sugar mixture over the entire bottom of the pan.

Spread marshmallow fluff into prepared pan.  Allow to rest on counter over night.

Cut into your favorite shape, or just squares.

Eat them on S'mores, in hot chocolate, or whatever you would like.

Enjoy!

California Beach Roll

Today in honor of California, the beach, and by request from Fernando, I made sushi.  More specifically I made what I have decided to name California Beach Rolls.  For my celebration of my California roots I also wore my California beach t-shirt.  Last night I made these rolls, and well my kitchen is really too dark to photograph food at night, so today I got a second chance to show you how I made California Beach Rolls (My own name, and creation).

I have not always liked sushi, but a few years ago my sister Jenifer treated me to a wonderful weekend in Carlsbad for my birthday.  Carlsbad has the most beautiful flower farm, in case you love to see rows and rows of amazing flowers.  On our way back home, we stopped at a sushi restaurant and the roll I ordered had tempura shrimp and avocado.  My recipe today is my take on that fabulous sushi roll I ate a few years ago.

With the help of my friend Bridget, we made Sushi to share with my husband and his co-workers (Especially Fernando) today.

Look at it, doesn't it look gorgeous?

Ingredients for sushi rice: 4 cups cooked room temperature Nishiki White Sushi Rice (NO you
may not substitute any other sad rice that isn't Nishiki), 1/3 cup cup Rice Wine Vinegar, 2
tablespoons sugar.

Ingredients for tempera batter fried shrimp: 10 large peeled and de-veined shrimp (Save yourself
the headache and spend the extra for the peeled and de-veined), Cornstarch, 1 cup flour, 1 egg,
and 1 can of Seltzer water.

Other ingredients for the California Beach Roll: 5 sheets Nori (seaweed, the nori pictured is from Costco but it is not the correct size, the correct kind is pictured below), and 1 ripe avocado.

Mix rice, vinegar, and sugar together.

Assemble sushi on parchment paper or bamboo sushi mat (covered with Ziploc bag) if you
have one.  Place a baseball size amount of rice on Nori sheets and with hands wet with water
flatten rice onto Nori.  The pictured Nori was purchased from an Asian market.   I HIGHLY
recommend buying it from an Asian market (cheaper) or buy from Costco (like they do in
California in full size sheets) if they have them.

Dredge shrimp in cornstarch and skewer on wooden skewer.   Try to make the shrimp as straight
as possible on the skewer.  We only want straight shrimp for our rolls.   That is your goal.

Crack the egg into a measuring cup, add enough seltzer to equal 1 cup.  Whisk the egg and
seltzer gently, we don't want to burst all the bubbles.  Add the flour, whisk gently again.

In a tall small saucepan over medium-high heat, bring vegetable oil and 1/4 cup Toasted
sesame seed oil to a boil.

Dunk the shrimp into the batter...
Then into the oil, cook until outside is golden brown.  Remove to a paper bag lined platter.
Repeat with all ten shrimp.  The paper bag will wick away the oil and keep the shrimp crispy
 and not soggy.

This recipe will make 5 sushi rolls.

Flip Nori over, so rice is facing down and Nori is facing up.  Slice avocado into 20 pieces.
Place two slices of avocado on edge of each Nori sheet.

Add shrimp next, remove tails if you kept them on.  We kept them on and fried them and
realized they should have been taken off.  Shrimp tails don't taste good.

Roll tightly from the avocado side forward.

Using a serrated knife cut the rolls into 1 inch slices, dunking the knife between each cut
into a bowl of water to prevent sticking.

You know you want one.   What are you waiting for?  Go get the ingredients.
Lets make some sushi!

Enjoy!
