No Churn Vanilla Ice Cream

We enjoy eating ice cream as a family, who doesn't?  Don't answer if you don't.  It can be challenge to make ice cream if you don't have an ice cream churn, its an uncommon kitchen appliance and even if you do then you also need ice and ice cream salt.  Getting all the supplies together may prove a challenge or maybe you just want ice cream without all the fuss.  This is a no fuss easy ice cream recipe that calls for just three ingredients and a few minutes of active preparing.  This is also a great base for adding a variety of mix-ins or toppings.  We like to make it into cookies and cream ice cream by adding crushed Oreo's or you could add my previous recipe of fruit salsa on top, that would be a delicious treat on a hot Summer evening.

Delicious simple vanilla ice cream, the start of a delicious and wonderful Summer evening on the back porch.


Ingredients:

1 Teaspoon Vanilla Extract
1 12 ounce can Sweetened Condensed Milk
1 pint Heavy Whipping Cream


Pour cream into a mixer, mix with the whisk attachment on low for a minute then increase speed to medium and whip until stiff peaks are formed.  When you hold the whisk straight and the cream on the whisk remained straight up.


 Remove bowl from stand mixer, pour in sweetened condensed milk and vanilla extract to the whipped cream.  Gently stir the mixture with a spatula until all ingredients are combined.

 Pour mixture into a freezer safe lidded container and freeze for at least 2-4 hours.  

Serve in your favorite bowl.

Dairy Free Orange Julius

If you remember my previous Orange Julius recipe, you know it has ice cream in it, so it isn't exactly dairy free.  This recipe is for my friends and family who may need to or wish to exclude dairy from their diets.  Really I'm just a sucker for trying to outdo myself and find out if it is possible to make a healthy substitute for a favorite food.  We love milkshakes, smoothies, any blended drink of the non alcoholic nature.  This was an experiment truthfully.  I used my family shamelessly as guinea pigs and had them drink it even before me.  My daughter's tend to be an either one or the other likes the smoothie or milkshake I make.  Lucky for me they both liked the Orange Julius.  Then I asked if it was a recipe worth sharing and my second daughter was confused, but she figured it out when we explained whether I should share it with you, and she said yes.  After they both said it was good, I tried it.  Guess what, they were right, and I agree it was good.  


We love blended drinks and this one is almost a guilt free treat.


Ingredients:

12.3 Ounces of Silken Tofu
1 Navel Orange
1 Teaspoon Vanilla Extract
1/2 cup Cane Sugar (White Granulated Sugar may also be substituted)
Orange Juice
Half Blender of Ice


Peel the orange, because this part just doesn't taste good.


Add orange and tofu to blender.


Pour enough orange juice in blender to come up to the three cup line.


Blend until smooth, or if using a Vita-Mix, use the smoothie setting
and blend until the program ends.


Enjoy!

Dairy Free Orange Julius

Ingredients:

Challah French's Toast

My daughter Haley's best friend from school, Jessica, LOVES french toast.  She has very few meals she likes to eat.  Jessica spends the night in our home often, and so I make french toast just about every time we have her with us for breakfast.  Since I make french toast so often, I wanted to try something new.  One of my favorite grocery stores sells the best Challah bread ever.  This seemed like the best way to change up french toast.  I purchased it on a whim and made french toast.  I have decided it is the best way to eat french toast ever.  When we lived in California, I would buy french bread to make french toast.  Well, this is so much better.  Believe me, you will want to try this for yourself.  This is a very simple french toast recipe.  In my hometown in California and my friend's home in Maryland, I found Challah bread.   You should be able to find it easily enough.

Ever wonder why we call this french toast?  It is actually named for Joseph French, an
innkeeper from Albany New York.  We should actually refer to it as French's Toast, but
a grammatical error changed history forever.  Not unlike German's Chocolate Cake
being renamed.


Ingredients:

1 loaf of Challah Bread
6 Eggs
3/4 cup Milk
1 teaspoon Vanilla Extract
1/2 teaspoon Nutmeg
1/2 teaspoon Cinnamon

Slice the challah bread into 1/2 inch to 1 inch thick pieces.

Mix eggs, milk, nutmeg, and cinnamon in a bowl.  My son Donovan would very
much want to make sure the eggs are very well mixed and no whites are visible.

The custard mixture and bread are ready to join together.

Preheat a skillet over medium heat.  Spray the skillet with nonstick spray. Dip the
bread into the egg mixture and cook until browned on both sides.

Butter the toast and sprinkle with powdered sugar if you would like to create
Jessica's french toast.

Ingredients:

1/2 teaspoon Nutmeg

Double Chocolate Chip Cookies

I shop at Costco on a regular basis, especially with a family of seven to feed.  The thought of being a mother to five children surprises me whenever I have it.  Back to my story, on occasion I bring my friend Whitney and her daughter with us to Costco.  We went to her home after Costco, and she shared the most delicious butterscotch cookies.  You might be asking yourself why I'm telling you about butterscotch cookies when clearly the title of the post is double chocolate cookies.  I used Whitney's recipe is a wonderful base recipe to add any sort of chips.  The double chocolate is actually white and milk chocolate chips in these cookies.  You can do what I did and add whatever chips you would like, semi-sweet, white, butterscotch, the choices are yours.

I have tried a multitude of chocolate chip cookies, these are the best chocolate chip cookies I have ever made.

Ingredients

1 1/2  cup Butter 
1 1/2 cups White Sugar
2 cups Brown Sugar
3 Large Eggs
2 tablespoon Vanilla Extract
1 1/2 teaspoon Sea Salt
1 1/2 teaspoon Baking Soda
4-6 cups Flour
1 1/2 cups Milk Chocolate Chips
1 1/2 cups White Chocolate Chips

Preheat oven to 350 Fahrenheit

 Combine baking soda, salt, sugars, and butter in mixing bowl.  Mix with a whisk until combined.



 Fluffy sugar, this is known as creaming the butter and sugars.  Mix until the sugar is noticeably lighter in color.

Crack eggs into bowl and whisk until combined, add vanilla and whisk to combine.


 Add flour starting with 4 cups or more depending on the consistancy and whisk on low until combined.  Flour helps give cookies structure, to little creates flat cookies and too much creates dry cookies.


 Add chocolate chips and whisk on low until combined.



 Using either a cookie scoop or a spoon create 1 1/2 inch balls of cookie dough.  Place cookie dough on ungrossed cookie sheet, leave room between balls to allow them to spread.

Bake cookies for 7-10 minutes.

You will have A LOT of cookies, really you will if you make this cookie dough.

Combine baking soda, salt, sugars, and butter in mixing bowl.  Mix with a whisk until combined.  Mix until the sugar is noticeably lighter in color.

Almond Butter Chocolate Chip Oat Cookies

Remember when I made almond butter? I had this great idea to make cookies with the almond butter. I couldn't just make simple cookies, these cookies were meant to be unique.  Keep in mind these are my own creation.  The recipe will include some ideas for how to make the cookies with alternate ingredients.  These cookies are even gluten free, go me.

Cookies, cookies, these cookies are even Cookie Monster approved.


Ingredients:

2 cups Almond Butter
4 Eggs
1 1/3 cup Oat Flour (quick cooking oats can be substituted)
4 teaspoons Vanilla Extract
2 teaspoons Baking Soda
2 cups Light Brown Sugar
2/3 cup Chocolate Chips

Preheat oven to 350 Farhenheit.

Whisk almond butter, and brown sugar in mixer bowl until combined.

Add eggs one at a time and whisk to combine, then add vanilla and whisk.

Mix flour (or quick cooking oats) and baking soda and add to creamed sugar and almond butter.  Whisk until combined.

Using a wooden spoon stir in chocolate chips.

Bake cookies on greased cookie sheets for 10-12 minutes.

No Bake Chocolate Chip Cookie Dough

This cookie dough, when prepared, is meant to be eaten raw.  It doesn't contain any eggs.  I love cookie dough, and I ran out of eggs this morning after using them all for breakfast.   Since cookie dough is so yummy, I decided to make something that didn't need to be cooked.  Cookie dough is delicious, and lets just say I was having a pregnancy craving.  Sure let's use that excuse.  I'm allowed to use that excuse, right? Of course I am, and you get to enjoy it with me too.  This recipe really did fill my craving.  You should try it.

Do you have a craving for cookie dough, but don't want to eat raw eggs?
This recipe will work for you.

Ingredients:

1 cup Multigrain Flour (Brown Rice, Barley, and Spelt) or Whole Wheat Flour
1/2 cup Turbinado Sugar (or Brown Sugar)
1/3 cup Cane Sugar (or White Sugar)
1/2 teaspoon Baking Soda
1/2 teaspoon Sea Salt
1/4 cup Softened Butter
1 teaspoon Vanilla Extract
1/3 cup Almond Butter
1 cup Semi-Sweet Chocolate Chips

 Blend the flour, baking soda, sugars, and salt together in a blender until fine.

Blend almond butter, butter, and vanilla extract in a mixing bowl using a paddle
attachment until smooth.


 Add flour mixture and blend until smooth and combined.

 Add chocolate chips, mix gently with a wooden spoon.

 If the dough still seems crumbly, place in a gallon size bag and gently massage until combined.

Enjoy!
