Chicken Pot Pie

As a kid I remember certain meals we had for dinner, like creamed peas over toast and liver and onions.  Other meals I remember were Banquet brand chicken pot pies and meatloaf.  The pot pies were always served with an extra helping of steamed carrots and peas.  This particular recipe I'm going to share is in honor of the chicken pot pie dinners I remember as a child but of course they're homemade.  Pie crust is one of the recipes I know almost by heart because it is so easy to remember the ingredients, but the real trick is how to handle the dough so the perfectly formed crust is tender and flaky.  Alton Brown has an awesome video with boxing hand puppets and everything explaining the delicate relationship of ingredients to create both a tender and flaky crust.  By far my favorite part of every pie is the crust, but in this case of my chicken pot pie both the filling and crust are perfect together, deliciously intertwined.

 Sometimes the best meal isn't pretty but very delicious.  I'm not a big fan of peas, in fact peas are rarely ever served at my table but this was a perfect reason to include peas.


Ingredients For Pie Crust:

2 cups All Purpose Flour
1 1/2 teaspoons Sea Salt
4 tablespoons cold Lard
5-7 tablespoons ice Water

Preheat oven to 425 Fahrenheit.

If you have a food processor, make your pie crust in it.  Put flour, salt, and lard in the processor with the dough blade and pulse until fine crumble consistency.  You may also use your finger tips to gently crumble the lard and flour together.

Slowly add the ice water to the flour, still pulsing or mix with your fingertips.  Not to much, mixing to much create gluten that doesn't make a flaky tender crust.  Knead until a somewhat loose disk is formed.  Place dough disk in plastic wrap and refrigerate for 20 minutes. 



Ingredients for Pie Filling:

2 cups Chicken Broth
3 tablespoons All Purpose Flour
3 tablespoons Butter
1 cup Carrots
1 cup frozen Peas
4 Green Onions
1 1/2 cups shredded Rotisserie Chicken
1 tablespoon Olive Oil
Sea Salt
Black Pepper

 Cut the carrots into small 1/2 inch dice, cut green onions including white part into 1/4 inch pieces.  Cut chicken into 1/2 inch chunks.

 Sauté carrots in olive oil over medium heat until tender. 

 Remove dough from the refrigerator, cut in half and roll them on flour to 1/8 inch thick rounds.  place the larger round in an 8 inch tart pan or pie pan.  Place the other round on a plate.  Place both pie crusts in the freezer.

Melt butter in a 12 inch saute pan over medium heat until the foam has subsided.  Add the flour and mix until combined and cook for a few minutes until flour taste is gone and replaced by a nutty flavor.

 Add the chicken broth and cook until thickened and bubbly.

 Mix in the frozen peas, sautéed carrots, green onions, and chicken.

 Add salt and pepper to taste.

Remove pie crust from freezer, pour the chicken filling in the crust.  Place second pie crust on top, press and seal.
 Cut slits into top crust to allow ventilation.  Place pie on a cookie sheet and bake in oven for 30 minutes. 


I took a piece before I took the after picture, its isn't as pretty but it was yummy.

Instant Pot Pork Carnitas

We have Taco Tuesday every week at my house, our family is big on day specific menu's.  It's a bit of challenge to come up with a different taco filling each week so I don't feel like were having the same food every Tuesday.  I do have three children who never eat Taco's and will only eat quesadilla's made with the same orange sharp cheddar cheese and a specific flour tortilla.  Back to tacos, my Instant Pot hasn't been used to much, I did make homemade chicken noodle soup on Monday with homemade broth and noodles which was awesome since I only used the Instant Pot for the whole process.   I'm not a big fan of wet, mushy meat so Crock-Pots are my least favorite way to cook any sort of meat.  After some searching I determined a two fold approach would yield the best results int his recipe.  The pork is cooked in the Instant Pot but crisped up under the oven broiler.  

A combination of flavorful crispy edged pork and homemade guacamole and salsa are the highlights of this perfect taco.

Ingredients:

2 lbs Pork Shoulder
1 Yellow Onion
1 Lime
1 tablespoon Bacon Grease (or other oil)
2 cups Chicken Broth
1 teaspoon Chili Powder
1 teaspoon Chili Lime Seasoning
1 teaspoon Garlic Powder
1/2 teaspoon Whole Cumin or 1 teaspoon Cumin Powder

 Peel and cut onion into big chunks.  Cut lime in half.

Turn on Instant Pot or comparable electric pressure cooker to sauté.  Melt bacon grease in pan then add 2 inch cubed pork and onion to pan and brown.

Add all the other ingredients to the pot including squeezing the limes over the pot.  Close lid according to directions, it chimes to help you know it is closed.  Set to high pressure for 30 minutes.
After pork is finished, allow pressure to release naturally for 20 minutes.  The Instant Pot has a timer telling you how long it has rested, very nice feature.  When it reaches the the de-pressuring stage I turn my oven on to the broil setting.

Remove pork from Instant Pot and place on a cookie sheet.  Using two forks shred the pork a little.  Don't completely shred it, just a little so more surface area will be broiled.   Place in a oven under the broiler for 15 minutes. 

 Look at that close up of the nice crispy pork, and then a pan out shot.  

Leave the juices in the Instant Pot and set to sauté, reduce the juices while the pork is under the broiler.

Pour the reduced juices on the pork and serve in your favorite taco.  I put corn tortillas on a griddle and slightly toast them then add the pork, homemade salsa, guacamole, lettuce, and cheese.

Hoppin John's

Today our church had another potluck.  Yes, two day's in a row.  This one had a theme, "New Years."  I looked online for traditional New Year's food and found all the foods associated with good fortune and good luck for the New Year such as beans, really really long noodles, round fruit, and some other foods.  In some Southern states it is traditional to eat a dish called Hoppin John's.  Good news, I had some of the ingredients and could get the others, so I decided to make it.

Hoppin John's

 Ingredients for brining black eyed peas (not to be confused with the band) are: 1 lb. black eyed peas,
4 quarts water, and 6 tablespoons coarse salt (Kosher salt would also work).

 Add salt to water in a large lidded container, mix until dissolved and add beans.  
Let brine over night.

 My brined beans are ready this morning.

Ingredients for this Hoppin John's are: 8 cups Chicken Broth (I made homemade, my recipe 
found here), 1 ham hock (I had a leftover ham bone from our Christmas spiral cut ham in our freezer), 
1 green bell pepper, 1 yellow onion, 1 bunch of green onions, and 1 lb. of brined black eyed peas.

 You may skip this step if you are using pre-made chicken broth.  Drain chicken broth into a sieve over a container.  I drained the beans and poured the chicken broth directly onto the beans. 

 Dice onion and bell pepper. Saute vegetables in 2 tablespoons of olive oil until onion is tender.

 Add everything to a pressure cooker pot, or a 6-8 quart stock pot.  Cook in pressure cooker on
high for 25 minutes or on stove top for 1 1/2 hours.

When pressure has naturally released, or it has been done cooking on the stove top, remove
ham hock and add sliced green onions and serve over steamed rice.
