Swiss Steak With Root Vegetables

The Swiss Steak recipe I shared with Julia and the NY Daily News I shared earlier was my second incarnation of Swiss Steak.  This recipe is similar to my mom's version of Swiss Steak and it is very good as well.  Do you like an all in the pot recipe?  You might like this incarnation of Swiss Steak.  

This mess of meat and vegetables reminds me of my mom more than my own reincarnation.


Ingredients

2 lbs Chuck Roast
1 Yellow Onion
4 cloves Garlic
4 large Carrots
2 lbs Potatoes
2 pints Brown Mushrooms
3 cups Stewed Tomatoes (San Martzano if you can find them)
1 1/2 cups Heavy Whipping Cream
1 cup Flour
Olive Oil


 Cut chuck into large chunks, dredge in the flour.

Pour oil into a preheated 12 inch skillet, enough to just cover the bottom.  Cook chuck over medium heat until browned on both sides.

 Peel carrots, potatoes, and garlic. Rinse mushrooms.  Cut potatoes and carrots into large chunks.

Place carrots, potatoes, garlic, and mushrooms in a pressure cooker pot or slow cooker.  Place chuck on the vegetables. Pour tomatoes and cream on met and vegetables. 

Cook everything in a pressure cooker on high for 55 minutes or low for 6 hours in a slow cooker.

Enjoy!

Zuppa Toscana

Have you been to Olive Garden and eaten Zuppa Toscana?  Yes, then you know how amazing that soup is.  This is my attempt.  I made up this recipe a few years ago and it isn't exactly the same, but I like it and wanted to share.  We are heading into Autumn here in New York.  Yes, we have seasons, unlike my home town in California.  The weather is cooling down and I am happy to be making soups in response to the cold.  For my family and friends in California, not enjoying the cool weather yet, maybe this soup can still give you some comfort.  

Comfort in a bowl.  Try it and you will see.

Ingredients:

1 lb. Breakfast Sausage
4 cloves Garlic
5 thin skinned Potaoes (Eastern or Red potatoes)
6 cups Vegetable Broth (Chicken Broth can also be substituted)
1 bunch Kale
1 1/2 cups Heavy Whipping Cream

Clean potatoes and kale and cut into 1/2 inch pieces.

Brown sausage in a stock pot over medium heat.

Pour broth into pot, add potatoes and garlic and cover and bring to boil and cook
until the potatoes are tender.

Add kale after potatoes are tender.  Cook for another 3 minutes.

Turn off heat, add cream, and stir.


Enjoy!

Mini Beef & Potato Pasties

A few years ago, as my contribution to a church social I made beef pasties, and well I haven't made them since.  I tend to be a one hit wonder with certain recipes.  It is a fault I have.  Finally, after thinking about making pasties again, I finally did it.  Today was another bring dinner to a new mom day, just so happens it is the same mom I brought dinner to last Wednesday.  She said her husband doesn't like seafood, but she enjoyed the bouillabaisse and ratatouille without him.  Since seafood was a no go with the new dad, I tried to think like a man and realized meat and potatoes.  Pasties are an Irish meat pie, and are perfect for the meat lover in your life.  

 Meat and potatoes in a biscuit crust, what more  could a man want?  Mushroom gravy too.

Ingredients:

1 lb. Self-Rising Cake Flour
1 1/3 cup Buttermilk (1 tablespoon vinegar with milk added to 1 1/3)
4 ounces cold Butter
2 lbs. Eye Round Beef roast
1 Yellow Onion
4 Idaho Potatoes
2 pints Baby Bella Mushrooms
2 cups plus 1 tablespoon water
2 tablespoons Better Than Boullian Beef Flavor
3 tablespoons Olive Oil
1 Egg Yolk
Cornstarch
Sea Salt
Freshly Cracked Pepper
Garlic Powder

Make sure your butter is cold. Cut half the butter into pats and the other half into 1/2 inch cubes.  
Using your fingers to mix butter and flour to create pea sized balls of butter and flour.

See my flour butter globules?  These are what make the wonderful flaky layers.  Add the buttermilk and knead until a ball is formed.  Add flour if the dough is too wet.

 Voila we have our crust.

Roll on a lightly flour board into a large 1/2 inch thick rectangle.  Fold into thirds, like a letter. Turn the dough 90 degrees and roll and repeat previous steps.  These steps are creating the flaky layers.

 Place folded dough on a parchment lined sheet pan and refrigerate.

Butterfly beef roast.  Rub the beef roast with salt, pepper, and garlic powder.  Rotisserie for
30 minutes or roast in 350 Fahrenheit oven for 45 minutes or until the internal temperature
reaches 145 Fahrenheit.

Preheat oven to 350 Fahrenheit.

  Rinse, peel, and grate the potatoes.

 Place grated potatoes into a bowl of cold water and allow to soak for 5 minutes.

 Rinse grated potatoes under colder water and place in a flour sack towel, squeeze out the liquid.

Peel and dice the onion finely.

Preheat large skillet over a medium flame.  Add 2 tablespoons olive oil, grated potato and onion.
Stir to coat.  Add salt, and pepper to taste.  Cover and allow to cook for 5 minutes, or until
grated potatoes are browned and soft.

 Dice beef into small cubes.

 Add beef to potatoes and stir.

Roll dough into a large 1/4 inch thick rectangle.  Push a 3 inch round cookie cutter straight down into dough, this will ensure the layers are left intact and repeat till all the dough is cut.

 Add 1 heaping tablespoon of beef potato mixture to the dough, fold in half and seal.

 Place completed mini pasties on parchment paper lined cookie sheets.
Mix egg yolk and 1 tablespoon water.  Brush on the pasties and sprinkle pasties with salt.

Bake pasties for 15 minutes or until golden brown.

Rinse mushrooms and sit into slices.  Saute in large skillet over medium high heat with
1 tablespoon olive oil.  Sprinkle with salt, pepper, and garlic powder.  Add water and Better
 than Boullian.  Bring to a boil.  Mix 1 tablespoon cornstarch and tablespoon water to begin with.
Add cornstarch slurry to mushrooms and water.  If the gravy is thick enough, it is done, if not,
 make more corn starch slurry and add slowly until desired thickness is achieved.

Serve pasties with gravy to dip in.

Bacalhau com natas

We are celebrating a favorite recipe from Portugal. According to Wikipedia "Bacalhau com natas (literally "cod with cream") is a popular way of cooking salted cod (bacalhau) in Portugal. It is an oven-baked dish consisting of layers of bacalhau, onion, diced fried potato and cream. Using dairy products such as cream or cheese is not common in traditional Portuguese main courses, however the popularity of this dish—in households and restaurants—make it a classic. The origin of this dish is unclear, but a similar one using cod and cream was invented by chef João Ribeiro in the 1930s." The reference can be found Here.  I used fresh cod for my recipe, supposedly this recipe used dried salted cod because it was more widely available than fresh.

 Bacalhau com Natas, not sure how to say this, but it was yummy.


Ingredients for this recipe are:

2 lbs. Fresh Cod
1 Yellow Onion 
1 3/4 cups Milk
2 cups Heavy Cream
4 Large Thin Skinned Potatoes (Eastern or Red Potatoes)
2 tablespoons Flour
6 tablespoons Butter
3 tablespoons Olive Oil
Freshly Ground Pepper
Salt

Preheat oven to 450 Fahrenheit

 Clean potatoes and thinly slice.

Peel onion, cut in half and thinly slice.

Preheat 10 inch skillet, add 3 tablespoons butter and 3 tablespoons olive oil.  Sauté onions and 
potatoes until tender.

Place potatoes and onions in oven proof dish, 12 inch oval ceramic if you have one or 9x13 glass dish.


 Melt remaining 3 tablespoons butter in pan that you just emptied potatoes and onions from.  

 When butter stops foaming add flour and whisk.  Cook flour for 3 minutes.

 Add milk, cream, salt, pepper, and whisk until thickened.

 Place filets on potatoes, sprinkle salt and pepper on filets.

 Pour cream over fish and potatoes.  

 Bake for 15-20 minutes, until golden and bubbly.

Enjoy!

Tikka Masala Vegetables

I have been making Indian food for dinner tonight. Tikka Masala Vegetables was the next dish I worked on. This was a side dish to the chicken nuggets.  I used the other half the spice mixture from the Garam Masala Sauce for this recipe as well, so hopefully you still have the Garam Masala spice mixture too.  

 Sneak preview of everything altogether.

 Ingredients for this recipe are: 1 green bell pepper, 1 cup baby carrots (2 large carrots), 2 small potatoes, 1 small yellow onion, 3 cloves of garlic, 1/2 inch piece of ginger, the other half of the
Garam Masala spice mixture from the recipe found here, 2 tablespoons Ghee (recipe found here),
 and not pictured is 2/3 cup yogurt (recipe found here).

Peel the potatoes and dice them along with the other vegetables.  Using a garlic press mince the
garlic, and using a grater grate the ginger.

 Saute vegetables with Ghee in a large pan.  Sprinkle with spice mixture.

 Stir until combined, add 1/4 cup water and cover with lid.  Cook on medium until vegetables
 are tender.

 Add yogurt, stir and serve...

With the Garam Masala sauce, chicken, and Roti.
